Broccoli rabe, also known as leafy broccoli, is widely used in Mediterranean cuisine and makes a great addition to healthy appetizers, like these Italian crostini. Roasted with red pepper, rabe pairs beautifully with cheese. Serve it on a toasted baguette slice with a slice of mozzarella and drizzle with balsamic vinegar to enhance the flavor.

  • 8 slices of mozzarella
  • A few drops of balsamic vinegar

In a large skillet, heat 2 tablespoons olive oil over medium-high heat. Add 1 bunch of sliced ​​broccoli rabe, season with salt, pepper, and red pepper flakes. Cook until the broccoli rabe is wilted, about 5 minutes. Toast 1 sliced ​​baguette in the oven at 350°F (175°C) for 6-8 minutes. Top each slice with a thin slice of fresh mozzarella and broccoli rabe. Drizzle with aged balsamic vinegar.
