Thinly sliced onions are slowly caramelized in butter with achovies and fresh thyme until they create the perfect crostini topping with a wonderfully sweet and spicy flavor. Arrange the caramelized onions on baguette slices, top with black olives and shaved Parmesan, and serve in a variety of ways.

In a large skillet over medium heat, melt 4 tablespoons butter. Add 3 sliced onions, 3 chopped anchovies, and 2 teaspoons chopped thyme. Season with salt and pepper and cook until the onions are golden brown, 20 minutes. Slice 1 baguette in half lengthwise. Brush the bread with butter, top with the onions, pitted olives, and drizzle with olive oil. Bake in the oven at 400°F (200°C) until the bread is crisp, 15 minutes. Cut into pieces and sprinkle with shaved Parmesan.
