This gooey cheesy potato casserole is perfect as a side dish or on its own as an appetizer. Sweet potatoes and sweet-spicy caramelized onions pair harmoniously, while salty Parmesan cheese with a hint of umami adds a perfect touch. To ensure even cooking, slice the sweet potatoes evenly, preferably using a vegetable peeler.

Ingredients for the recipe:
- 5 sweet potatoes, peeled and thinly sliced
- 3 tablespoons of butter
- 2 large onions, peeled and thinly sliced
- 2 cloves garlic, finely chopped
- 1.5 cups heavy cream
- 1 and 1/4 tbsp. grated parmesan or goat cheese
- 1 teaspoon of salt
- 1 teaspoon black pepper
- Olive oil
- 1 tbsp. l. dried parsley

Cooking the dish according to the recipe:
- Preheat oven to 190°C. Grease a 20x20 cm baking dish with vegetable oil. Melt the butter in a frying pan, add the onion and garlic, and fry over low heat for 15 minutes.
- Layer 1 layer of sliced sweet potatoes, overlapping slightly, 1 layer of onions, drizzle with cream, sprinkle with parsley, and 1/4 cup Parmesan cheese. Repeat layers until all ingredients are used. Sprinkle the top layer with the remaining Parmesan cheese.
- Cover with foil and bake for 40 minutes, then remove the foil and continue baking for another 25 minutes, until the sweet potato is tender and the top is golden brown. Let the gratin rest for 15 minutes.
