Caramelized onions and roasted garlic add a rich, spicy flavor to the creaminess of mashed potatoes. For this recipe, the garlic is baked in foil and then slowly sautéed in olive oil for half an hour. Watch carefully to prevent it from browning prematurely and adjust the heat. This will ensure the onions are perfectly browned, sweet and spicy, golden, and fragrant. Mash the potatoes and onions together, and stir in the roasted garlic paste at the very end.

Roasted Garlic Mix
  • 2-4 heads of garlic, depending on size
  • 2 tbsp. l. olive oil

Caramelized onions
  • 2 tbsp. l. olive oil

Mashed potatoes
  • 900 g of potatoes, unpeeled
  • 1 cup whole milk
  • 110 g unsalted butter
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat the oven to 350°F (175°C). Halve the garlic cloves crosswise and drizzle with olive oil. Wrap the garlic in foil and roast until soft, about 1 hour. When cool enough to handle, squeeze the cloves into a small bowl and lightly mash with a fork.
  • Step 2
  • Caramelized onions:

    Heat olive oil in a large skillet over medium heat. Add the onion and sauté, stirring occasionally, until golden brown, about 30 minutes. If the onion starts to brown too quickly, reduce the heat.
  • Step 3
  • Mashed potatoes:

    Place the potatoes in a medium saucepan, cover with cold water, and add 2 tablespoons of salt. Bring to a boil and simmer, uncovered, until tender, about 45 minutes. Drain.
  • Step 4
  • Peel the potatoes and return them to the pan (if desired, puree them using a vegetable grinder or masher). Add the onion. Mash the potatoes with the onion, milk, and butter. Stir in the roasted garlic and 2 tablespoons of salt, and season with pepper to taste.
