Roasted garlic and mashed rutabaga enhance the flavor of classic mashed potatoes. The addition of low-calorie rutabaga also lightens the dish and adds healthy fiber. The rutabaga is boiled separately from the potatoes, then mashed together with milk, butter, and aromatic roasted garlic.

Ingredients:


Roasted Garlic Mix
  • 2-4 heads of garlic, depending on size
  • 2 tbsp. l. olive oil

Swede
  • 450 g rutabaga, peeled and chopped

Mashed potatoes
  • 900 g of potatoes, unpeeled
  • 1 cup whole milk
  • 110 g unsalted butter
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat the oven to 350°F (175°C). Halve the garlic cloves crosswise and drizzle with olive oil. Wrap the garlic in foil and roast until soft, about 1 hour. When cool enough to handle, squeeze the cloves into a small bowl and lightly mash with a fork.
  • Step 2
  • Swede:

    Bring a medium saucepan of salted water to a boil. Add the rutabaga and simmer until tender, about 25 minutes. Drain thoroughly.
  • Step 3
  • Mashed potatoes:

    Place the potatoes in a medium saucepan, cover with cold water, and add 2 tablespoons of salt. Bring to a boil and simmer, uncovered, until tender, about 45 minutes. Drain.
  • Step 4
  • Peel the potatoes and return them to the pan (if desired, puree them using a vegetable grinder or masher). Add the rutabaga. Mash the potatoes with the rutabaga, milk, and butter. Stir in the roasted garlic and 2 tablespoons of salt, and season with pepper to taste.
