A festive take on the American coleslaw. It includes shredded red cabbage, grated rutabaga, carrots, and green onions. All vegetables are used fresh. Top them with cashews and dried cranberries and dress with a mayonnaise-and-orange sauce. Let the salad steep in the dressing and serve chilled. This colorful, delicious, and juicy vegetable side dish makes a wonderful healthy complement to holiday meats or burgers.

In a large bowl, combine 1/2 cup mayonnaise, 2 tablespoons each orange juice and white wine vinegar, and 2 teaspoons sugar. Add 1 grated rutabaga, 1 grated carrot, 1/2 cup shredded red cabbage, 1 chopped green onion, 1/3 cup salted cashews, and 1/4 cup dried cherries. Refrigerate for 20 minutes. Season with salt to taste.
