Leeks sautéed in butter and a little water make a wonderful addition to tender mashed potatoes with sweet and spicy roasted garlic. Mash the potatoes and leeks together, and for the most airy and creamy mash, use a potato masher before adding the remaining ingredients. A great side dish for any meat or poultry dish.

Ingredients:


Roasted Garlic Mix
  • 2-4 heads of garlic, depending on size
  • 2 tbsp. l. olive oil

Stewed leeks
  • 2 tablespoons butter
  • 1 bunch leeks, thoroughly washed and thinly sliced

Mashed potatoes
  • 900 g of potatoes, unpeeled
  • 1 cup whole milk
  • 110 g unsalted butter
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat the oven to 350°F (175°C). Halve the garlic cloves crosswise and drizzle with olive oil. Wrap the garlic in foil and roast until soft, about 1 hour. When cool enough to handle, squeeze the cloves into a small bowl and lightly mash with a fork.
  • Step 2
  • Stewed leeks:

    In a large skillet, heat the butter and 2 tablespoons of water over medium heat. Add the leeks and cook, stirring occasionally, until softened, 10-15 minutes.
  • Step 3
  • Mashed potatoes:

    Place the potatoes in a medium saucepan, cover with cold water, and add 2 tablespoons of salt. Bring to a boil and simmer, uncovered, until tender, about 45 minutes. Drain.
  • Step 4
  • Peel the potatoes and return them to the pan (if desired, puree them using a vegetable grinder or masher). Add the leeks. Mash the potatoes with the onion, milk, and butter. Stir in the roasted garlic and 2 tablespoons of salt, and season with pepper to taste.
