Mashed potatoes with baked garlic

How to Make - Roasted Garlic Mashed Potatoes
Time: 1 hour 15 minutes
Complexity: easily
Servings: 6 - 8

Add a few heads of roasted garlic to traditional mashed potatoes for the perfect side dish for any meal. Roasting the garlic cloves softens them like a paste and blends perfectly into the mashed potatoes. Their flavor loses its sharpness, becoming deep and rich, perfectly complementing the creamy mashed potatoes.

    Step 1
  • Preheat oven to 175°C.
  • Step 2
  • Halve the garlic cloves crosswise and drizzle with olive oil. Wrap the garlic in foil and roast until soft, about 1 hour. When cool enough to handle, squeeze the cloves into a small bowl and lightly mash with a fork.
  • Step 3

Place the potatoes in a medium saucepan, cover with cold water, and add 2 tablespoons of salt. Bring to a boil and simmer, uncovered, until tender, about 45 minutes. Drain.
  • Step 4
  • Peel the potatoes and return them to the pan (if desired, puree them using a vegetable grinder or potato masher). Mash the potatoes with milk and butter. Add the roasted garlic and 2 tablespoons of salt, and season with pepper to taste.
