This sweet potato mash with Parmesan and green onions is the perfect combination of sweet, salty, and spicy. It's a great alternative to traditional mashed potatoes when you're craving more flavor, and a unique side dish for holiday chicken or turkey.

Cooking the dish according to the recipe:
- Place the sweet potatoes in a large saucepan, cover with cold water, and season generously with salt. Bring to a boil and simmer until tender, 9-10 minutes. Drain thoroughly and return the sweet potatoes to the same saucepan over low heat. Mash with a potato masher until smooth. Add the butter, Parmesan, and salt and pepper to taste. Mash until the butter melts. Add the green onions. Serve sprinkled with Parmesan and green onions.
