These crispy sweet potato fritters with corn and green onions are the perfect savory fall appetizer. They're fried in butter, making them crispy on the outside and soft and moist on the inside. Brush the fritters with sour cream, top with extra green onions, and enjoy!

Ingredients:

  • 1 large sweet potato (about 1 cup)
  • 4 tablespoons melted salted butter
  • 1 egg
  • 1/4 cup breadcrumbs
  • 2 tbsp. flour
  • 1/4 cup chopped green onions (reserve 1 tablespoon for topping)
  • 0.5 cup fresh or frozen corn (defrosted)
  • 1 cup sour cream
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a shallow frying pan, heat oil to 175°C.
  • Step 2
  • Prick the sweet potato with a fork and microwave on high for 6 minutes or until tender. Let cool. Cut the potato in half lengthwise, scoop out the flesh, and place it in a bowl with the butter. Mash thoroughly. Add the egg, breadcrumbs, flour, salt, and black pepper and mix well. Add the green onions and corn and mix gently.
  • Step 3
  • Using two spoons, drop mounds of batter into the hot oil and fry a few fritters at a time on both sides until golden brown. Using a slotted spoon, transfer them to a paper towel to drain excess oil. Mix the sour cream with the remaining green onions, season with salt and pepper to taste, and spoon a spoonful onto each fritter when serving.
