Fluffy, golden-brown donuts are a treat you can't resist. They're even more delicious when fried with apples. Add coarsely grated apples to the batter and deep-fry. If you don't have a deep fryer, you can use a saucepan with plenty of oil. Remember to measure the oil temperature and reheat it after each batch. Dust the finished donuts with powdered sugar and enjoy while they're still warm.


Ingredients:


Apples
  • 2 medium sour apples, peeled and coarsely grated
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 3 tablespoons of sugar
  • A pinch of ground cinnamon

Dough
  • 2/3 cup sour cream
  • 0.5 cup + 2 tablespoons sugar
  • 2 large eggs, separate the whites from the yolks
  • 1 and 3/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 teaspoon salt
  • 2.5 tbsp (35 g) butter, melted
  • Vegetable oil for frying
  • Powdered sugar for dusting
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Mix the grated apples with the lemon zest, juice, sugar and cinnamon and leave for a few minutes (to soften the apples).
  • Step 2
  • Whisk the sour cream, 0.5 cups of sugar, and egg yolks. Stir in the grated apples (along with any juices). In a separate bowl, sift the flour, baking powder, cinnamon, nutmeg, and salt. Stir everything into the sour cream mixture, then add the melted butter. Beat the egg whites until foamy, then add 2 tablespoons of sugar and continue beating until soft peaks form. Fold the beaten whites into the batter and fry it immediately.

  • Pour oil into a deep fryer according to the manufacturer's instructions (or add 3 inches of oil to a large, deep saucepan). Heat the oil to 350°F (175°C) (if frying donuts in a saucepan, use a syrup thermometer). Line a baking sheet with paper towels and place a cooling rack on it. Using a small ice cream scoop, scoop out batter and carefully drop it into the oil, spacing the donuts apart to ensure even cooking. Fry the donuts for about 3 minutes per side, then remove with a slotted spoon and transfer to a wire rack to drain. Cool for 10 minutes, dust with powdered sugar, and enjoy.

    Donuts are best eaten warm or at room temperature the same day you fry them.
