Fluffy fritters filled with vegetables and seafood, covered in a crispy crust, are always a welcome beer appetizer or a hearty snack. Mix the dough with finely chopped shrimp, zucchini, green onions, and hot jalapeño peppers and fry the fritters in a deep fryer or a saucepan with plenty of oil. After draining the excess fat, serve the fritters with a dipping sauce made with mayonnaise, pickled gherkins, mustard, and herbs. Dip and savor their flavor.


Ingredients:


Gherkin sauce
  • 1 cup mayonnaise
  • 0.5 cup chopped gherkins
  • 2 tablespoons Dijon mustard
  • 1 teaspoon mustard powder
  • 1 tsp. chopped tarragon
  • Juice of 1 lemon

Shrimp fritters
  • Vegetable oil for frying
  • 2 eggs, whites separated from yolks
  • 240 g peeled small shrimps (caliber 26/30), chopped
  • 1 cup finely chopped green onions
  • 1 cup finely diced zucchini
  • 1 clove garlic, minced
  • Half a jalapeño, chopped
  • 1 cup flour
  • 1 teaspoon baking powder
  • 0.5 tsp smoked paprika
  • About 2/3 cup of sour milk
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Gherkin sauce: In a small bowl, combine mayonnaise, gherkins, Dijon mustard, mustard powder, tarragon, and lemon juice. Season with salt and pepper.
  • Step 2
  • Shrimp fritters: In a heavy-bottomed saucepan, heat about 4 cm of vegetable oil until it registers 175°C on a deep-fry thermometer.
  • Step 3
  • In a small bowl, beat the egg whites until medium peaks form. In a separate bowl, combine the shrimp, onion, zucchini, garlic, and jalapeño.
  • Step 4
  • In a medium bowl, whisk together the flour, baking powder, and paprika. Stir in the egg yolks and enough sour milk to form a fairly thick batter (adjust the amount of sour milk). Season with salt and pepper. Fold in the shrimp mixture, then the egg whites.
  • Step 5
  • Drop batter into the oil with a tablespoon, 1 tablespoon per fritter. Fry until golden brown, about 5 minutes, then drain on paper towels. Season immediately with salt. Serve with gherkin sauce.
