Make crispy beer-simmered apple fritters and serve with a delicious peanut butter caramel sauce. Granny Smith apples are tart and perfect with the sweet sauce. If you prefer a sweeter apple, choose Golden Delicious.

Ingredients:


Apple fritters
  • 2 Granny Smith or Golden Delicious apples, peeled and chopped
  • 1/4 cup brown sugar
  • 2 tbsp. granulated sugar
  • 0.5 tsp pumpkin pie spice mix
  • 1/4 tsp allspice
  • Grate nutmeg 2-3 times
  • 1 cup premium flour
  • 280 ml of beer (for example, Coronita)
  • Peanut oil, for frying

Caramel sauce with peanut butter
  • 0.5 cup light brown sugar
  • 110 g butter
  • 0.5 cup heavy cream, room temperature
  • 0.5 cup peanut butter
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a bowl, combine apples, allspice, pumpkin pie spice, allspice, and nutmeg. Set aside.
  • Step 2
  • In a large bowl, combine the flour with a pinch of salt. Make a well in the center of the flour and stir in the beer. Knead until smooth. It should be slightly thicker than pancake batter. Carefully fold in the apple mixture and let sit for 10 minutes at room temperature.
  • Step 3
  • Apple fritters:

    Heat oil in a large skillet to 180°C (350°F), making sure the oil stays at 175°C (350°F) when adding the batter. Once hot, carefully add the batter in small batches, like pancakes. Fry until golden brown on both sides, turning once, about 4 minutes total. Transfer to a paper towel-lined plate. Serve with peanut butter caramel sauce.
  • Step 4
  • Caramel sauce with peanut butter:
    Yield: 2 tbsp.

    To melt the sugar, combine the brown sugar in a saucepan and let it melt, stirring, over medium heat. Once the sugar has melted, add the butter and stir continuously until melted and smooth. Turn off the heat and gradually pour in the heavy cream, stirring until smooth. Be careful, the caramel will splatter! Add the peanut butter and reduce the heat again to low until the peanut butter dissolves into the caramel sauce, about a minute or so. Remove from the heat and serve warm.
