When you're craving something crispy in a hurry, make these fritters. They're made with only simple ingredients found in almost any kitchen: flour, eggs, butter, and vegetable oil for frying. Fry the dough pieces until golden brown and enjoy as an appetizer. They're best served with a squeeze of lime syrup.

Ingredients:


Syrup
  • 0.5 cups of sugar
  • 0.5 cups honey
  • Grated zest and juice of 2 limes

Fritters
  • 3/4 cup premium flour
  • 3 large egg yolks
  • 3 tablespoons unsalted butter, melt and let cool
  • A pinch of salt
  • Vegetable oil, for deep-frying
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Prepare the syrup:

    Combine the sugar, honey, lime zest and juice, and 1/4 cup water in a small saucepan and heat over medium heat. Bring to a boil and simmer for 5 minutes. Remove from heat and set aside. The syrup can be refrigerated, covered, for up to three days; reheat before serving.
  • Step 2
  • Prepare the fritters:

    In a large bowl, whisk together the flour, 3/4 cup water, egg yolks, oil, and salt to form a runny batter.
  • Step 3
  • In a large, deep skillet, heat 1 cm of vegetable oil to 175°C (350°F) on a deep-fry thermometer. Drop 1 tablespoon of batter at a time into the hot oil and fry the fritters, turning once, until golden brown on both sides, about 3 minutes per batch. Reheat the oil to 175°C (350°F) between batches. Transfer to a paper towel-lined plate to drain. Drizzle with lime syrup.

  • You can fry the fritters up to 4 hours in advance. Serve them chilled or reheat in the oven at 190°C.
