Grilled fruit is a wonderful light dessert that's the perfect way to end your barbecue party, and pineapple is the perfect choice. Thread pineapple sticks onto skewers and grill, drizzling homemade vanilla-lime syrup over the fruit until it caramelizes. Leftover syrup can be refrigerated for a long time. According to Alton Brown, it pairs wonderfully with almost any dish, from sweet sponge cake to roast pork tenderloin.
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:
- 1 vanilla bean
- 220 g dark brown sugar, (about 1 cup), tightly packed
- 0.5 cup freshly squeezed lime juice
- A pinch of coarse salt
- 1 whole pineapple
- 8 metal skewers, 20 cm each.

Cooking the dish according to the recipe:
- Split the vanilla bean lengthwise, scrape out the seeds, and place the bean and seeds in a small saucepan with the brown sugar, lime juice, and salt. Stir everything together and bring the mixture to a boil over medium-high heat, stirring until the sugar dissolves.
- Remove from heat and let steep for 2 hours before using. Remove the vanilla bean from the pan. Once the syrup has cooled, pour it into a bottle or other container with a lid. Store in the refrigerator.
- Preheat grill to high heat.
- Peel and core the pineapple. Cut the pineapple lengthwise into eighths and remove the brown eyes.
- Thread the pineapple pieces lengthwise onto skewers. Brush the pineapple with syrup on all sides. Grill until golden brown on all sides, about 4 minutes per side, for a total of 12 minutes, or until the pineapple is tender. Serve with the remaining syrup.
