Pineapple is a popular side dish for meat or savory salads, beautifully complementing the flavors of other ingredients with its juiciness and sweet, tart flavor. It's even more delicious if grilled first. Choose a ripe, aromatic pineapple, and follow the instructions in this recipe to peel it properly and cut it into neat rings. Serve the fried rings with chicken or pork, or use them to make a Mexican salsa.

Slice the pineapple into rings (see Note). Lightly brush both sides of the pineapple rings with vegetable oil. Grill, turning once, until crispy grill marks appear, about 3 minutes per side.
Note
How to cut and peel a pineapple:1. Using a sharp chef's knife, cut off the top and bottom of the pineapple.
2. Stand the pineapple upright and cut the peel along the ridges. Remove any remaining hard brown spots, or "eyes."
3. Cut the peeled pineapple crosswise into slices. Using a small round cookie cutter or a watermelon scoop, remove the core from each slice.
Make roasted pineapple salsa: Chop it and mix with chopped red onion, chopped jalapeño pepper, lime zest and juice, chopped cilantro, salt and pepper.
