Before grilling, marinate zucchini, cut into long sticks, for a few minutes in a mixture of olive oil, salt, black pepper, lemon zest, and juice. Once they're cooked and crispy, sprinkle them with a touch of salt and lemon zest. This seasoning infuses the vegetables with a wonderfully refreshing flavor and can be used with other vegetables besides zucchini. Serve zucchini with lemon salt as a side dish with fish, chicken, or pasta, or as a standalone appetizer with white wine and other beverages.

Cooking the dish according to the recipe:
- Trim the ends of the zucchini and cut them lengthwise into quarters. Place them in a very large resealable plastic bag (or two regular-sized bags). Pour in the olive oil, then add 1 teaspoon of salt, 1 teaspoon of black pepper, 1 tablespoon of lemon zest, and lemon juice. Seal the bag and toss everything inside to coat the zucchini. Let marinate for 15-20 minutes.
- Preheat the grill to medium heat. Grill the zucchini, turning occasionally, until tender, being careful not to brown them, 12-15 minutes. Transfer the cooked zucchini to a plate.
- Place the remaining lemon zest on a cutting board and sprinkle with 1 tablespoon of salt. Chop the zest and salt with a knife to create lemon salt. Add more salt if needed. Sprinkle the fried zucchini with lemon salt.
