If you're looking for a new way to deliciously cook zucchini, you might want to try this recipe. This dish is popular as an Italian fast food. It's worth noting that the zucchini should be dredged in flour before dipping. This will help the breading adhere better. It's a good idea to let the zucchini sticks dry for 20-30 minutes before deep-frying. If you prefer to skip the Parmesan, you can sprinkle the finished dish with coarse salt on paper towels. The crystals will add an interesting texture and enhance the flavor.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 3 medium zucchinis, cut into strips 8cm long and 1cm wide.
  • 1 and 3/4 tbsp. grated parmesan
  • 1.5 tbsp. panko breadcrumbs
  • 3/4 tsp salt
  • 2 large eggs
  • Olive oil, for frying

Cooking the dish according to the recipe:


  1. Pour enough olive oil into a large skillet to create a 2-inch (5 cm) layer. Heat over medium heat until a deep-fry thermometer registers 350°F (177°C).
  2. Combine 1.5 cups Parmesan cheese, breadcrumbs, and salt in a medium bowl. In another bowl, beat the eggs until smooth and dip the zucchini strips a few at a time, coating them completely with the egg, letting any excess drip back into the bowl. Then roll them in the breadcrumb mixture, patting to adhere and coat them completely. Place the zucchini strips on a baking sheet.

  3. When the oil is hot, fry the zucchini sticks a few at a time until golden brown (about 3 minutes). Using a slotted spoon, transfer the fried zucchini to paper towels to drain excess oil.

    Place the fried zucchini on a platter. Sprinkle with the remaining Parmesan cheese and serve.
