  • In a large bowl, combine mayonnaise, chili powder, cayenne pepper, and 1/2 teaspoon salt. Add the chicken thighs and toss to combine. Cover and refrigerate to marinate for 2 hours or overnight.

  • Preheat the grill to medium-high heat. Grease the grill grate with vegetable oil. Sprinkle the breadcrumbs into a serving dish, then coat the chicken thighs in them. Place the chicken on the grill and cook until golden brown, 20 to 25 minutes per side.
