The lemon marinade pairs beautifully with chicken, adding juiciness and a piquant flavor and refreshing aroma, perfectly complemented by the herbs. Grilled chicken thighs will bring a summery feel any time of year.


Ingredients:

  • Juice and zest of 4 lemons + 2 whole lemons
  • 5 sprigs rosemary, finely chopped
  • 5 sprigs sage, finely chopped
  • 3 cloves garlic, crushed and finely chopped
  • 0.5 tsp crushed dried red pepper
  • 8 chicken thighs, trimmed of excess fat
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a small bowl, add lemon juice, zest, chopped herbs, garlic, crushed red pepper, and 0.5 cups of olive oil. Whisk to combine.
  • Step 2
  • Place the chicken thighs in a single layer on a wide, flat plate. Pour the prepared mixture over them. Rub the marinade into the chicken thighs, cover them, and refrigerate them overnight.

    Advice: For a quick marinade, leave the chicken at room temperature for 1 hour.
  • Step 3
  • Preheat the grill. Clean and oil it.
  • Step 4
  • Remove the chicken from the marinade and let any excess oil and spices drain. Season the thighs generously with salt and drizzle with a little olive oil.
  • Step 5
  • Halve two lemons and trim the ends so the lemons are cut-side up and not falling over. Place the chicken thighs skin-side down on the preheated grill. Place the lemon halves skin-side down on the grill. Grill the chicken for 3-4 minutes, then rotate the pieces 90 degrees to create a grid-like pattern on the thighs. Grill for another 3-4 minutes.
  • Step 6
  • Then flip the chicken pieces and fry the other side for 4-5 minutes. Check for doneness (the chicken should be cooked through). Check to see if the lemon halves are well caramelized. Turn them cut-side up and fry the bottom for 2-3 minutes.

    Serve the grilled lemon chicken.
