We offer a recipe for oven-baked chicken thighs in a sweet and sour ketchup-based sauce with orange marmalade and ginger. The meat is first pan-fried, then brushed with the sauce, and baked until done. Serve this dish with roasted bell peppers and green onions, and we recommend rice as a side dish.

Ingredients:

  • 8 chicken thighs (about 1.7 kg)
  • 3 tablespoons ketchup
  • 2 tbsp orange or apricot jam
  • 2 teaspoons soy sauce
  • 2 tsp balsamic vinegar
  • 1 piece (2.5 cm) peeled and grated ginger
  • A large pinch of cayenne pepper
  • 2 bell peppers (1 red, 1 yellow), cut lengthwise into 4 pieces
  • 1 bunch green onions, coarsely chopped
  • 3 tsp extra virgin olive oil
  • Table salt
  • Cooked white rice as an accompaniment to the dish
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 230°C.

    Make sweet and sour sauce: In a small bowl, combine the ketchup, jam, soy sauce, vinegar, ginger, and cayenne pepper. Place the bell peppers and green onions on a baking sheet and toss with 2 tablespoons of the prepared sauce, 1.5 teaspoons of olive oil, and a pinch of salt.
  • Step 2
  • Heat 1.5 teaspoons of olive oil in a large, shallow skillet over medium-high heat. Sprinkle the chicken thighs with 1/2 teaspoon of salt.

    Fry the meat until golden brown, about 4 minutes. Then brush the fried chicken thighs with the remaining sweet and sour sauce.

    Bake on a baking sheet with vegetables in the oven for 20-25 minutes. Serve with rice and the remaining sauce.
