This recipe for chicken thighs is sure to please those who love spicy food. This rich dish will captivate you with its flavor, piquancy, and sophistication. The mustard marinade makes the meat juicier and infuses it with the aromas of the spices.


Ingredients:

  • Vegetable oil for greasing the baking sheet
  • 2 tbsp (30 g) butter
  • 2 finely chopped garlic cloves
  • 1 cup mild mustard
  • 1/2 tsp cayenne pepper
  • 1.5 cups breadcrumbs
  • 3/4 tbsp. grated Parmesan cheese
  • 1/4 cup finely chopped chives (or parsley)
  • 2 tsp paprika
  • 8 small skinless chicken thighs (about 1100 g)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat the oven to 220°C (425°F). Grease a baking sheet with a little oil. Combine the butter and garlic in a bowl. Cover with plastic wrap and melt the butter in the microwave for about 1 minute. Whisk in the mustard and 1/4 teaspoon of cayenne pepper.
  • Step 2
  • In a large bowl, combine the breadcrumbs, Parmesan, onion, paprika, and the remaining 1/4 teaspoon cayenne pepper. Sprinkle the chicken thighs with 1/2 teaspoon salt. Dip each thigh in the mustard mixture until completely coated, then coat in the breadcrumbs on all sides. Place on the prepared baking sheet, making sure the pieces aren't touching.
  • Step 3
  • Bake on the middle rack of the oven for about 40 minutes, until the crust is golden brown and crispy and the meat is cooked through.
  • Step 4
  • Transfer to a large platter and serve.
