Fried chicken with a thick, crispy crust is hard to resist. Everyone loves it, especially kids. But along with the divine texture and flavor of fried chicken, you get a lot of unhealthy fat and extra calories. With this recipe, you can make crispy breaded chicken without frying—in the oven. It will be just as delicious and super crispy. Use chicken thighs. Unlike white meat, they are juicier after baking. For the breading, use crushed cornflakes, and to ensure they stick to the chicken, brush it with a mixture of buttermilk, hot sauce, and beaten egg whites.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Chicken

  • 8 boneless, skinless chicken thighs, trimmed of all visible fat (about 1.5 lbs.)
  • 0.5 tsp. homemade seasoning, see recipe below
  • 1/4 cup low-fat yogurt or kefir
  • 0.5 tsp hot sauce
  • 2 egg whites
  • Zest and juice of 1 lemon
  • 1 and 1/4 cups crushed cornflakes

Homemade seasoning

  • 1 tbsp. salt
  • 1/4 cup garlic powder
  • 1/4 cup black pepper

Cooking the dish according to the recipe:


  1. Preheat oven to 375°F (190°C). Spray a large cast-iron skillet with nonstick cooking spray and heat over medium-high heat.
  2. Sprinkle the chicken with the homemade seasoning. Combine the buttermilk, hot sauce, egg whites, lemon zest and juice in a large bowl and toss the chicken to coat it on all sides.

  3. Place the crushed cornflakes in another large bowl. Roll the chicken in the crumbs, pressing firmly until they adhere, then place them in the skillet and bake in the oven.
  4. Bake until chicken is cooked through and browned, or a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C), 40 to 45 minutes.

    Homemade seasoning:

    Combine salt, garlic powder, and black pepper in a bowl and store in an airtight container for up to 6 months (1.5 cups of seasoning).
