These shrimp are oven-fried, but they turn out golden and crispy, just like deep-fried. Your secret weapon: Japanese panko breadcrumbs. They're larger and fluffier than regular breadcrumbs, ensuring crispiness even without a ton of oil. Add chopped fresh herbs to the breadcrumbs, and the shrimp become incredibly flavorful.

  • 1 cup panko breadcrumbs

    Step 1
  • Mix 1 tbsp. panko breadcrumbs, 1/4 cup olive oil, the juice of 1 lemon, and a handful each of chopped parsley, basil, and chives; season with salt and pepper to taste. Coat 1 pound (450 g) peeled, deveined shrimp in the breadcrumb mixture and broil until golden brown, 3-4 minutes. Sprinkle with chives.
