Grilled Jerk Chicken with Fresh Mango Salsa - step-by-step recipe.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 4 chicken thighs with skin and bones
  • 4 drumsticks with skin
  • 1 large Scotch bonnet pepper, stemmed and seeded
  • 1/2 cup vegetable oil
  • 1 coarsely chopped onion
  • 2 coarsely chopped green onions
  • 1 tbsp. grated fresh ginger
  • 3 coarsely chopped cloves of garlic
  • 1 tbsp finely chopped fresh thyme
  • 2 tablespoons red wine vinegar
  • 1 tbsp. l. brown sugar
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • A pinch of ground cloves
  • 1 teaspoon ground allspice
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 teaspoon fresh lime juice

Mango and Cilantro Relish:

  • 2 peeled and diced mangoes
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped cilantro
  • 3 tablespoons lime juice
  • 3 tablespoons fresh orange juice
  • Salt and ground black pepper

Cooking the dish according to the recipe:


  1. To make jerk chickenIn a food processor, puree all ingredients except the chicken until almost smooth. Prick the chicken with a fork to create small holes. Place the drumsticks and thighs in a large, shallow dish and massage the marinade into the chicken. Cover and refrigerate for 24-48 hours, depending on how rich you want the flavor.
  2. Preheat the grill. Grill the chicken for 5-6 minutes on each side, until cooked through.
