A recipe for bone-in pork loin marinated in pineapple, ginger, soy sauce, and five-spice seasoning. The pork is grilled and served with rice and a salsa made with grilled and crushed pineapple, green onions, and spices.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 4 bone-in pork loins (1.2 cm thick, approximately 800 g)
  • Pinch pepper flakes
  • 1 cup long-grain white rice
  • 1 pineapple, peeled, quartered lengthwise, core removed
  • 1 tbsp. chopped peeled ginger
  • 1 tbsp. vegetable oil
  • 1 tbsp soy sauce, plus a little extra for salsa
  • 1/2 teaspoon Chinese 5-spice seasoning
  • 1 bunch of green onions

Cooking the dish according to the recipe:


  1. In a medium saucepan, combine the rice with 1 2/3 cups of water and bring to a boil. Cover, reduce heat to low, and simmer for about 15 minutes, until the water is absorbed and the rice is tender. Remove from heat and set aside.
  2. Meanwhile, cut a 5 cm (2 in) piece of pineapple and coarsely grate it into a large bowl. Add the ginger, vegetable oil, 1 tablespoon of soy sauce, and 1/4 teaspoon of five-spice seasoning. Add the green onions and pork. Coat them thoroughly with the mixture and let marinate for 10 minutes. Grate the remaining pineapple with the remaining 1/4 teaspoon of five-spice seasoning.

  3. Preheat the grill to medium-high heat. Grill the pork for 3 minutes on each side, until cooked through. Grill the pineapple and green onions for 3 minutes, turning occasionally, until lightly charred.
  4. Chop the pineapple and green onions into large chunks and place in a bowl. Add red pepper flakes and a splash of soy sauce and stir. Serve the pork loin with rice and pineapple salsa.
