Grilled chicken thighs in a citrus marinade - a detailed recipe.


Ingredients:

  • 1.1 - 1.4 kg chicken thighs with bone and skin (pre-cut off excess fat)
  • Salt and ground black pepper
  • 1/4 - 1/3 cup vegetable oil
  • Zest and juice of 1 lemon
  • Zest and juice of 1 orange
  • Zest and juice of 1 lime
  • A little cayenne pepper
  • 10 sprigs of fresh thyme
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Generously season the chicken with salt and pepper. In a baking dish (not metal) large enough to accommodate the entire chicken in the marinade, combine the vegetable oil, citrus zest and juice, cayenne pepper, and thyme. Add the chicken and stir until completely coated. Marinate for at least 30 minutes or up to 2 hours in the refrigerator.
  • Step 2
  • Preheat the grill. Remove the chicken from the marinade and allow any excess to drip back into the pan. Place the chicken on the hot grill, being careful not to crowd it. Grill until cooked through, turning the thighs occasionally, about 15 minutes total, depending on how hot the grill is. Serve immediately.
