This sweet and tart marinade transforms boring chicken breast into a delicious dish perfect for a midweek dinner. Combine it with chicken (you can use thighs instead of breasts) and freeze it for easy on-hand cooking.

Ingredients:

  • 1/4 cup honey
  • 3 tablespoons Dijon mustard
  • 3 tbsp. grainy mustard
  • 4 boneless, skinless chicken breasts or 8 boneless, skinless chicken thighs (about 700 g)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Marinade:

    Combine honey, Dijon mustard, grain mustard, and 1/2 teaspoon salt in a large zip-lock plastic bag. Add 4 boneless, skinless chicken breasts or 8 boneless, skinless thighs (about 16 oz./700 g), press out any air, seal the bag tightly, and gently massage the chicken to coat with the marinade. Refrigerate for 2 hours or freeze for up to 1 month; thaw overnight in the refrigerator before cooking.

  • Transfer the chicken from the bag to a 9 x 13-inch baking dish and cover with foil. Bake in the oven at 425°F (220°C) for 10 minutes. Remove the foil and continue baking until a thermometer inserted into the meat registers 165°F (74°C), another 10-15 minutes.
