Crackers with mustard-onion jam and figs

A unique and easy-to-make appetizer with a beautiful blend of flavors. This dish is ready to be served to guests. However, keep in mind that crackers topped with ricotta and mustard-onion jam lose their crunch fairly quickly, so it's best to enjoy them immediately. Once served, the appetizer won't have time to get soggy, as it'll be hard for guests to miss.

Ingredients:
- 2 tbsp. l. olive oil
- 2 large onions (about 680 g), quartered and thinly sliced
- 6 tablespoons apple cider vinegar
- 1/4 cup freshly squeezed orange juice
- 2-3 tsp. hot-sweet German mustard
- Nut crisps or pita crackers (about 60), for serving
- 1.5 cups fresh ricotta
- 470 ml fresh figs, stems removed and sliced

Preparation:
- Step 1
- Heat the olive oil in a small saucepan over medium heat. When it begins to thin and shimmer, add the onion and 1 tablespoon of salt. Cook, stirring occasionally, until the onion softens, begins to break down, and begins to brown, 12-15 minutes. Step 2
- Stir in 4 tablespoons vinegar and orange juice. Cook, stirring occasionally, until the mixture is almost smooth, thick, and golden brown (7-10 minutes). Step 3
- Remove from heat. Stir in the remaining 2 tablespoons vinegar and mustard. Taste and adjust seasonings to taste. Step 4
- To assemble the snack, top each crisp or cracker with about 1 teaspoon ricotta, 1/2 teaspoon mustard-onion jam and a slice of fig.
