These energy bars are especially good thanks to their chewy, lumpy texture. They're rich in fiber, and cinnamon and ground ginger add a tangy, flavorful touch.

Ingredients:

  • 1 cup quick-cooking oats
  • 1 tbsp. dry breakfast with bran
  • 1/4 cup whole wheat flour
  • 1 cup walnuts
  • 1.5 cups dried figs, stemmed and chopped
  • 1/2 cup skim milk powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 cup honey
  • 2 large eggs
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 180°C. Spray a 22 x 33 cm baking dish with cooking spray.
  • Step 2
  • Place oats, cereal, flour, walnuts, figs, milk powder, ginger, and cinnamon in a food processor and pulse until finely chopped.
  • Step 3
  • Add honey and eggs, mix well.
  • Step 4
  • Transfer the mixture to the pan, spreading it evenly with your fingers. Bake for about 20 minutes, until lightly browned around the edges. Cool in the pan for 15 minutes, then cut into 16 bars. Store in an airtight container at room temperature for up to 3 days, or wrap each energy bar individually and freeze for up to 3 months.
