Tarragon's bright, sweet flavor and aroma make it a great alternative to traditional basil in this quick homemade pesto with walnuts and olive oil. Breadcrumbs help bind all the ingredients into a thick paste that's easy to spread on bread.

Ingredients:

  • 2 tbsp chopped fresh parsley leaves
  • 2 tablespoons chopped fresh tarragon leaves
  • 4 tbsp coarsely chopped walnuts
  • 1 tbsp. breadcrumbs
  • 1/3 cup olive oil
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place parsley, tarragon and walnuts in a mortar.
  • Step 2
  • Add the breadcrumbs and crush with a pestle until a paste forms. Season with salt and pepper and gradually add the olive oil, stirring constantly. Serve with crusty bread.
