This recipe produces bread that's especially soft and moist, just like factory-baked bread, thanks to the combination of vegetable oil and sour cream, rather than the traditional butter and milk.


Ingredients:

  • 1 and 2/3 wheat flour
  • 1 teaspoon baking soda
  • 1/4 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 tbsp. plus 2 tbsp. sugar
  • 2 eggs
  • 1/2 cup vegetable oil
  • 3.5 very ripe bananas, mashed into puree
  • 2 tbsp. crème fraîche or sour cream
  • 1 tsp vanilla extract
  • 2/3 cup toasted and chopped walnuts
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Set the oven temperature to 180°C. Line the bottom of a bread pan with parchment paper.

    Mix the flour, baking soda, cinnamon, and salt. Whisk the eggs and sugar for 10 minutes until the mixture is light and fluffy. Pour in the oil. Add the mashed bananas, crème fraîche, and vanilla extract. Fold in the dry ingredients and add the nuts.

    Pour the batter into the prepared pan and bake for 45 minutes to 1 hour.
