Vietnamese Grilled Chicken Wings with Walnut and Onion Spread - A Step-by-Step Recipe.


Ingredients:

  • 24 whole large chicken wings
  • 1/2 cup chicken bouillon powder
  • 1/2 cup Vietnamese chili sauce (Sriracha sauce will do)
  • 1/2 cup honey
  • 1/2 cup vegetable oil
  • 1/2 cup shallot puree (regular onion will work too)
  • 1/4 tbsp. rice vinegar
  • 20 finely chopped kaffir lime leaves
  • 1 cup cilantro leaves
  • 1 cup chopped roasted peanuts
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Combine chicken stock (gross, but effective), chili sauce, honey, oil, shallots, vinegar, and lime leaves and blend until a smooth paste forms.

    Reserve some of the paste for brushing and place the rest in a resealable plastic bag. Toss the chicken wings with the paste, place them in the bag, and marinate for 30-60 minutes.
  • Step 2
  • Light a fire using coals on one side of the grill. Place the wings on the grill facing the hot coals. Close the grill and cook the chicken until almost done, 25-30 minutes. Turn the wings halfway through cooking for even cooking.

    To finish cooking the wings, brush them with the remaining paste and grill directly over hot coals until they are charred.

    Transfer the chicken to a plate and sprinkle with cilantro and peanuts.
