These savory wings in a sticky homemade barbecue sauce are the perfect pairing with beer. The sauce is made with mustard, beer, spices, hot sauce, and cane syrup, and is packed with a whole host of flavors. These wings are irresistible!

Ingredients:

  • 1 cup grainy Dijon mustard
  • 0.5 cups of beer or unsweetened tea (preferably pilsner)
  • 0.5 cup cane syrup
  • 2 tablespoons hot sauce (such as Texas Pete)
  • 1 tbsp. white vinegar
  • 1 tbsp Worcestershire sauce
  • 2 cloves garlic, grated
  • 12 whole chicken wings at room temperature
  • Hot Hungarian paprika, for sprinkling
  • White bread, for serving
  • Pickled cucumbers, for serving
  • Special equipment: 2 grate stands, thin wire
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a medium saucepan, combine the mustard, beer or tea, cane syrup, hot sauce, white vinegar, Worcestershire sauce, garlic, a pinch of salt, and plenty of ground black pepper. Simmer over medium heat until slightly thickened, about 30 minutes.
  • Step 2
  • Preheat grill to 375°F (190°C) for indirect heat.
  • Step 3
  • Place the wings on the grill, place a second grill rack on top, and secure with wire on both sides. Season with salt, pepper, and paprika on all sides. Place on the grill over indirect heat, flesh side down.
  • Step 4
  • Close the grill and cook for about 15 minutes. Brush with sauce, then turn the wings over and brush with more sauce.
  • Step 5
  • Continue cooking until the wings are golden brown and the sauce has thickened and become sticky, about 15 more minutes. Serve with bread and pickles.
