Fried chicken wings are the most sought-after beer appetizer, and if you're hosting a large gathering, surprise your friends with variety and prepare wings in three different flavors: honey barbecue sauce, spicy butter sauce, and citrus zest. Divide the fried chicken into three pieces and immediately toss with each topping while it's hot.


Ingredients:


Chicken wings
  • 2 liters of cooking fat for frying
  • 24 whole chicken wings (about 2.8 kg)
  • 4 eggs
  • 1/4 cup heavy cream
  • 2 tablespoons cayenne pepper
  • 2 tbsp. salt
  • 1 tbsp freshly ground black pepper
  • 2 cups of flour
  • 1 cup cornstarch
  • Zest of 1 lemon
  • Zest of 1 lime

Honey BBQ sauce
  • 2 tbsp. ketchup
  • 0.5 cup dark brown sugar
  • 3 tablespoons whipped honey
  • 2 tablespoons yellow mustard
  • 2 cloves garlic, crushed
  • 4 teaspoons turmeric
  • 0.5 tsp chili powder

Hot butter sauce
  • 1 cup hot sauce (preferably Frank's Red Hot)
  • 220 g butter
  • Juice of 1 lemon
  • 1 small bunch of basil
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large saucepan, melt the fat and heat to 190°C (350°F). Place a wire rack on a baking sheet. Using kitchen shears or a sharp knife, cut the chicken wings in half (discard the tips).
  • Step 2
  • In a large bowl, combine the eggs, cream, cayenne pepper, 1 tablespoon of salt, and ground black pepper. In a paper bag, combine the flour, cornstarch, and 1 tablespoon of salt. Dip the chicken in the egg mixture and toss well to coat. Place the chicken in batches into the bag with the flour mixture. Shake well to coat. Place on a wire rack to set for 20 minutes.
  • Step 3
  • Meanwhile, prepare the honey barbecue sauce and hot butter sauce. In a small saucepan, combine the ingredients for the honey barbecue sauce and bring to a boil over medium-high heat. Reduce the heat and simmer, stirring frequently, until the sauce has reduced by half, about 12 minutes. In another saucepan, combine the ingredients for the hot butter sauce and bring to a simmer. Remove from heat and let the basil steep in the butter for at least 15 minutes. Discard the basil.
  • Step 4
  • When the fat reaches the desired temperature, add the chicken, working in batches, and fry until cooked through and crispy, about 13 minutes. Season the chicken with salt, then immediately toss with honey barbecue sauce or hot cream sauce. Alternatively, garnish with lemon and lime zest. Serve immediately.
