How to Make Matcha-Watch Chicken Wings

A football game on TV, beer, and wings go hand in hand. With this recipe for fried wings, made in three different flavors at once, you'll delight all your friends. But keep in mind that the wings topped with Parmesan and garlic will be the first to disappear!

Ingredients:


Wings
  • 6 tbsp neutral vegetable oil + more as needed
  • 4.5 kg chicken wings, cut in half (without tips)
  • 2 teaspoons coarse salt
  • 1 teaspoon freshly ground black pepper
  • Fresh vegetables, for serving
  • Ranch sauce, for serving

Pepper sauce with honey and lemon
  • 220 g unsalted butter, melted
  • 0.5 cups honey
  • 2 tbsp lemon juice + lemon wedges for serving, optional
  • 2 tbsp lemon pepper (seasoning)
  • 2 tbsp chopped fresh parsley + extra for serving, if desired

Buffalo Sauce
  • 0.5 cup hot pepper sauce, such as Frank's
  • 4 tablespoons unsalted butter
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon ground black pepper
  • 1 teaspoon coarse salt
  • 0.5 tsp garlic powder

Garlic and Parmesan topping
  • 4 tbsp melted butter
  • 0.5 tbsp. grated parmesan
  • 2 tsp garlic powder
  • Half dried ranch seasoning (from a 30g package)
  • Special equipment: deep fat thermometer
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large (5-6 l) deep saucepan with a thick bottom, heat the oil to 190°C
  • Step 2
  • Wings:

    Season the wings with salt and pepper. Pat dry 6-7 wings, carefully lower them into the oil, and fry, stirring occasionally, until golden brown, 8-10 minutes depending on size. Using a slotted spoon, transfer the wings to paper towels to drain excess oil. Fry the wings in batches of 6-7, transferring them to paper towels and returning the oil to 190°C (add more oil if necessary).
  • Step 3
  • Pepper sauce with honey and lemon:

    In a large bowl, combine the butter, honey, lemon juice, lemon pepper, and parsley. Add a third of the wings and toss to coat. Garnish with lemon wedges and chopped parsley, if desired.
  • Step 4
  • Buffalo Sauce:

    In another large bowl, combine the hot sauce, butter, Worcestershire sauce, pepper, salt, and garlic powder. Add a third of the wings and toss to coat.
  • Step 5
  • Garlic and Parmesan topping:

    Place the butter in a large bowl. Combine the Parmesan, garlic powder, and ranch dressing in a separate large bowl. Dredge the remaining wings first in the butter, then in the Parmesan mixture. Serve the wings with vegetables and ranch dressing for dipping.
