Caribbean-Style Chicken Wings with Spicy Glaze - A Detailed Recipe.


Ingredients:

  • 3.1 kg chicken wings
  • 1 habanero pepper, seeded and chopped
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 2 tablespoons of sugar
  • 2 teaspoons fennel seeds
  • 2 tsp cayenne pepper
  • 2 tsp allspice
  • 2 tsp dried thyme
  • 1 teaspoon ground ginger
  • 4 chopped cloves of garlic
  • 4 chopped green onions
  • 1/4 cup apple cider vinegar
  • 1/4 cup lime juice
  • 1/4 cup orange juice
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a food processor, puree all ingredients except the wings until smooth. Set aside 1 cup of the marinade. Place the chicken wings in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for 4-6 hours.
  • Step 2
  • Preheat oven to 180°C. Line 2 baking sheets with parchment paper. Remove the wings from the bag and place them on the baking sheets. Bake for 20 minutes. Meanwhile, bring the reserved marinade to a boil in a small saucepan. Reduce by 1/3 until slightly thickened, about 10 minutes.

    After 20 minutes, remove the wings from the oven. Brush them with the glaze. Increase the oven temperature to 400°F (205°C) and bake the chicken until done, another 20 minutes.
