Grilled chicken wings are the perfect summer alternative to deep-fried wings, and their rich, sweet and spicy flavor makes them simply explosive! Before cooking, the wings are marinated for several hours in a mixture of honey and spicy garlic sauce. They are then grilled, first over direct heat, and then on the cooler side of the grill, where they are brushed with a sweet and spicy honey-garlic sauce with ginger and other Asian spices. These spices give the wings a wonderfully balanced flavor and a delicious shine.

The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:

  • 2.2 kg chicken wings
  • 1 tbsp. honey
  • 1/3 cup hot garlic sauce
  • 1/4 cup coarse salt
  • 0.5 cup sweet soy sauce
  • 3 tablespoons Sriracha sauce
  • 2 tablespoons lightly salted soy sauce
  • 1/4 cup minced fresh ginger
  • 1/4 cup apple cider vinegar
  • 1 tbsp chopped green onions, for serving
  • 1 teaspoon toasted sesame seeds, for serving

Cooking the dish according to the recipe:

  1. Cut the chicken wings at the joints and discard the tips. In a large glass bowl, combine 6 cups of water, 1/4 cup of honey, 1/4 cup of hot garlic sauce, and salt. Stir until the salt dissolves. Add the wings and refrigerate for 30 minutes or up to 4 hours.
  2. To make the sauce, in a small bowl, combine the remaining hot garlic sauce, remaining honey, sweet soy sauce, Sriracha sauce, light soy sauce, ginger, and vinegar. Set aside half the sauce for serving, and use the rest to brush the wings while grilling.

  3. Preheat the grill to medium-high heat. Remove the wings from the marinade and season with sea salt and black pepper. Grill until golden brown, 15-20 minutes, turning as needed. Once browned, continue grilling, moving them to indirect heat, until cooked through. Brush the wings with the sauce, turning as needed, until glossy and well-coated. Sprinkle with green onions and sesame seeds and serve with the reserved dipping sauce.

    Note

Hot garlic sauce and Sriracha sauce can be found in the ethnic food section of supermarkets or online.
