Grilled chicken in a flavorful Caribbean marinade - a detailed recipe.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 4 chicken breasts or thighs with bones and skin
  • 2 tablespoons seeded and diced jalapeño peppers
  • 2 tsp grated or chopped fresh ginger
  • 1 teaspoon allspice
  • 1/4 cup chopped red onion
  • 1/2 cup chopped green onions
  • 2 tbsp. l. olive oil
  • 1/4 cup fresh orange juice
  • 1 tbsp. l. lime zest
  • 2 tablespoons soy sauce
  • 2 tablespoons chopped fresh thyme leaves
  • 1 clove of garlic
  • Salt and ground black pepper
  • Lime wedges

Cooking the dish according to the recipe:


  1. Puree all ingredients except the chicken in a food processor. Place the marinade and chicken in a resealable plastic bag, mix thoroughly, and marinate in the refrigerator for 4-8 hours.
  2. Preheat oven to 180°C.

    Preheat the grill to high, remove any excess marinade from the chicken, and place it on the grill. Sear the chicken on each side for 3-4 minutes, then transfer to a baking dish and finish cooking in the oven for 15 minutes.

    Squeeze a wedge of lime over each piece of chicken and serve.
