The orange peeling method for this simple dessert is called "suprême" by chefs: the citrus fruit is completely freed of its white pith and membranes, leaving behind tender, juicy segments. Warm them up in an orange-honey syrup with cinnamon and a pinch of cayenne pepper and serve with crepes, pancakes, Belgian waffles, or French toast, transforming them into a truly exceptional dessert.

Cooking the dish according to the recipe:
- Remove the zest from one of the oranges and set it aside. Working with one orange at a time, cut a 0.5 cm thick slice from the top and bottom. Place the oranges cut-side down on a cutting board and peel from top to bottom. Hold the orange in one hand and, over a bowl, cut along each membrane to the center, allowing the segments to fall into the bowl. It's okay if the slices break.
- Squeeze the remaining membrane over a second bowl to collect all the juices; add the juices from the bowl with the oranges. Repeat with the remaining oranges.
- In a medium skillet over medium heat, melt the butter. Add the cinnamon stick and a pinch of cayenne pepper and cook until fragrant, about 1 minute. Add the orange juice, zest, and honey and bring to a simmer. Cook, uncovered, stirring occasionally, until the liquid thickens to a syrup, about 7 minutes more.
- Add the orange slices and cook until heated through. Remove from heat and discard the cinnamon stick. Drizzle the orange syrup over fried waffles, pancakes, or French toast.
