The easiest way to prepare pumpkin deliciously is to slice it, mix it with maple syrup, and roast it in the oven. Natural maple syrup perfectly brings out the natural sweetness of butternut squash. Toss the baked pumpkin with pumpkin seeds and dried cranberries and serve as a side dish or as a standalone appetizer.

  • 3 cups butternut squash chunks
  • 1 tbsp. l. olive oil
  • 0.5 tsp coarse salt
  • 1/4 tsp maple syrup
  • 1/4 tsp pumpkin seeds
  • 1/3 teaspoon cranberries

  • Place the pumpkin in a bowl, add olive oil, salt and maple syrup and stir.
