Peel 4 medium beets and cut them into small pieces. Toss with 1 tablespoon olive oil, 1 teaspoon salt and pepper to taste and place on a baking sheet. Bake at 450°F (230°C), stirring once or twice during baking, until tender, about 35 minutes. Transfer the roasted beets to a bowl; toss with 4 chopped green onions and 2 teaspoons lemon juice. Top with feta cheese.
