Beets are one of the healthiest and most affordable winter vegetables. Despite their apparent simplicity, they can be a delicious appetizer that will impress even the most discerning of eaters. Prepare baked beets with a delicious Asian glaze. Freshly squeezed orange juice and its sugar are simmered with miso paste, creating a delicious, umami-rich glaze. Sprinkle the beet wedges with green onions before serving.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 900 g beets (about 7 pcs.), trimmed
  • 3/4 cup freshly squeezed orange juice (2-3 pcs.)
  • 2 tablespoons white miso paste
  • 2.5 tsp sugar
  • 2.5 tsp soy sauce
  • 4 slices of ginger, 0.5 cm thick.
  • 3 cloves garlic, crushed
  • Chopped green onions, for serving

Cooking the dish according to the recipe:


  1. Preheat oven to 200°C. Place beets in a large baking dish and add 1/3 cup water; cover the dish with foil.
  2. Bake, adding more water to the pan if it evaporates, until the beets are easily pierced with a knife, 50-60 minutes. Remove the foil and let the beets cool. Peel the beets and cut into 1-cm-thick wedges; transfer to a medium bowl.

  3. In a medium skillet, combine orange juice, miso paste, sugar, soy sauce, ginger, and garlic and heat over medium-high heat.
  4. Bring to a boil and simmer, stirring occasionally, until the sauce thickens and reduces to 1/4 cup, 8-10 minutes. Strain through a sieve and pour over the beets. Season with salt to taste and stir. Sprinkle with green onions.
