Rainbow carrots are a scattering of white, yellow, purple, and orange carrots that taste just like regular orange carrots, but look so bright and cheerful on the holiday table! Roasted rainbow carrots make a beautiful and healthy side dish, and they're also delicious, especially when drizzled with orange juice and zest, which adds a refreshing citrus flavor. Serve garnished with flaky salt.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 450 g orange carrots, unpeeled
  • 450 g rainbow carrots, unpeeled
  • 1 tsp. grated orange zest
  • 2 tablespoons freshly squeezed orange juice
  • 1 tsp. fleur de sel

Cooking the dish according to the recipe:


  1. Preheat oven to 230°C.
  2. Remove the tops and wash the carrots thoroughly with a brush. Cut the carrots into long, diagonal slices. They should be roughly equal in size, about 10 cm long and 1 cm wide.

  3. Place the carrots on a baking sheet, drizzle with 3 tablespoons of olive oil, and sprinkle with 1 teaspoon of coarse salt and 0.5 teaspoon of black pepper. Mix well with your hands and spread into a single layer.
  4. Bake for 15-20 minutes, stirring once, until carrots are lightly browned and tender.
  5. If I use citrus juice in cooking, I often add the zest for even more flavor." says the chef. Sprinkle with orange zest, fleur de sel, and orange juice, and mix well. Serve the carrots hot or at room temperature.
