Transform French fries from an appetizer into a delicious side dish, perfect even for holiday meals. This recipe uses pre-cut and frozen French fries. Cut carrots and parsnips into similar-sized sticks or strips, mix all the vegetables together, and bake. Add a wonderful touch of cilantro and coriander to the garnish.

Peel 2 large carrots and parsnips and cut into 8-10 cm (3-4 in) sticks. In a large bowl, toss the vegetables with half an 800 g (28 oz) bag of frozen French fries, 2 tablespoons olive oil, 1 teaspoon crushed coriander seeds, 1/2 teaspoon coarse salt, and a few freshly ground black pepper. Place on a baking sheet and roast at 425°F (220°C), stirring halfway through, until the vegetables are tender and the fries are crisp, 45 minutes. Toss with 2 tablespoons chopped cilantro.
