Pumpkin side dishes boast an interesting, unique flavor because, while pumpkin is a vegetable, it's also sweet. This creates a stunning effect when paired with other vegetables and seasonings. For example, roast acorn squash with tomatoes. Their tartness perfectly balances the pumpkin's sweetness. Add onion, garlic, and fragrant rosemary to the vegetables. And when the vegetables are done, add some grated, salted Parmesan cheese for the finishing touch.

Halve, seed, and thinly slice 1 small acorn squash; slice 2 medium tomatoes into wedges. Combine the squash with the tomatoes, 1 small chopped red onion, 2 crushed garlic cloves, 1 sprig of rosemary, 2 tablespoons olive oil, 1 tablespoon balsamic vinegar, and salt and pepper. Bake at 425°F (220°C), stirring once, until tender, about 40 minutes. Sprinkle with grated Parmesan.
