Rainbow carrots make a simple yet striking side dish. Take a few bunches of colorful carrots and roast them in the oven in olive oil. For a more original presentation, you can even leave some of the greens on. This side dish is perfect for any holiday when all the work falls on the main course. Sprinkle the carrots with green onions before serving.

Toss 3 bunches of rainbow carrots with 1 tablespoon olive oil and 1/2 teaspoon coarse salt on a baking sheet; spread in a single layer. Bake in the oven at 450°F (230°C), stirring once, until the carrots are tender and lightly browned, 15 minutes. Sprinkle with salt and finely chopped chives.
