The easiest and quickest way to make a delicious eggplant appetizer is to cut them in half and bake them in the oven. A few minutes before they're ready, when they're golden brown and soft, brush them with a simple yet delicious glaze of honey, sesame oil, and Japanese miso paste. This will give the finished vegetables a delicious shine and a vibrant, exotic flavor. This recipe is perfect for both everyday and festive meals.

Recipe:
Slice 2-3 eggplants in half lengthwise and crosswise. Brush both sides of each slice with 2 tablespoons of olive oil. Place skin-side down on a foil-lined baking sheet. Bake at 200°C (400°F) until tender, about 15 minutes. Mix 2 tablespoons each of white miso paste and honey with 1 teaspoon of sesame oil. Turn the eggplants over, brush with the glaze, and bake until crispy, about 4 minutes. Sprinkle with chopped onion and cilantro.
