Seared pork ribs with a sticky honey glaze are a hit at any party. They're baked whole and then sliced ​​into individual ribs just before serving, coated in a delicious layer of tender, savory meat. For meatier ribs, choose ribs cut from the loin rather than the belly. Rub them with a spice mixture before baking (marinating is optional), and a few minutes before they're done, brush them with the honey glaze. Even though they're oven-baked, the ribs retain the smoky flavor and aroma of real barbecue.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 4 tsp cumin seeds
  • 4 tsp coriander seeds
  • 4 tsp. brown sugar
  • 4 tsp smoked paprika
  • 0.5 tsp red pepper flakes
  • 2 layers of pork ribs, cut from the loin (weighing 0.7-1 kg each), remove the membranes
  • 2 tablespoons of vegetable oil
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar

Cooking the dish according to the recipe:


  1. Preheat oven to 160°C and place a rack on a rimmed baking sheet.
  2. Place the cumin and coriander seeds in a zip-lock plastic bag and crush them with a heavy skillet. Transfer to a bowl and add the brown sugar, paprika, and red pepper. Sprinkle the ribs generously with salt and black pepper, rub with vegetable oil on all sides, then rub with the spice mixture, pressing firmly to adhere. Transfer the ribs, meaty side up, to the grill rack.

  3. Combine the honey and vinegar in a small bowl. Bake the ribs, rotating the pan after 45 minutes, until well-browned, 1 hour 30 minutes to 1 hour 45 minutes. Spread half of the honey mixture on both sides of the ribs and bake for another 15 minutes, then brush with the remaining honey mixture and continue baking until well-browned and tender, about 15 minutes more. Transfer the ribs to a cutting board and let cool slightly before slicing.
