If you don't have access to an outdoor grill, don't worry, because you can also cook excellent pork ribs in the oven. The recipe couldn't be simpler, and thanks to the use of chipotle peppers in the sauce, it's sure to please those who enjoy a spicy kick.


Ingredients:

  • 1,140 g pork ribs
  • 1 teaspoon instant coffee
  • 3/4 cup tkemali plum sauce
  • 0.5 cups orange juice
  • 2 tablespoons crushed chipotle peppers in adobo sauce
  • 2 tbsp. l. brown sugar
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Dissolve the coffee in 1/4 cup hot water. Combine the coffee, plum sauce, orange juice, chipotle pepper, and brown sugar in a small saucepan. Bring to a boil over medium heat, then reduce the heat. Let it simmer for about 5 minutes to thicken the sauce slightly. Season with salt and pepper.
  • Step 2
  • Brush the ribs with sauce on both sides, reserving 2/3 cup for basting later. Place the ribs, meat side up, on a baking sheet lined with foil in a single layer.
  • Step 3
  • Preheat oven to 175°C.

    Cover the baking sheet tightly with foil and bake for 1 hour. Remove the foil, baste the ribs with the remaining barbecue sauce, and bake for another hour.

    Let the cooked ribs rest for 10-15 minutes before slicing and serving.
